Apple Dutch Cupcakes

It was my Dad’s birthday last weekend and he loves apple bakes, apple pie, apple crumble actually any apple cake I set about making one of my favourites Apple Dutch Cake which I made into cupcakes. As Covid is making visiting difficult I opted for cupcakes and had them delivered to Dad and Mom to celebrate Dad’s 78th birthday. We video conferenced which was the next best thing…. candle blowing and singing happy birthday too him with the whole family was very surreal yet comforting that we are able to see each other even it is virtually.

Filling the house with pumpkin spice smells and apples, autumn fall had surely arrived in our house… who does not love pumpkin season.

As my family and friends all have different diets – vegetarians, vegans, gluten free and dairy free I made two sets of cupcakes – one with flour and dairy free – and one with gluten free flour and dairy free… it gets complicated yet fun in the kitchen.

Apple Dutch Cupcakes with Apple Oat Crumble

For the Apple Oat Crumble

  • 75g organic plain flour
  • 1tsp pumpkin spice
  • 40g stork
  • 15g organic oats
  • 40g raw organic cane sugar

For the Apple Dutch Cake

  • 175g caster sugar
  • 2 large eggs
  • 1tsp vanilla paste
  • 85g stork
  • 75ml oat milk
  • 125g organic plain flour
  • 2 1/4tsp baking powder
  • 1tsp pumpkin spice
  • 1 large apple (any variety)

Prepare your cupcake holders in your cupcake baking tray.

Preheat your oven to 180ºC degrees.

Begin by preparing the apple oat crumble by combining the flour, pumpkin spice together then add the butter mixing together until it looks like bread crumbs. Add the oats and sugar to the mixture. Leave to one side to be used at the end of the recipe.

In a bowl put the caster sugar, large eggs and vanilla paste, whisk them together until it forms a mousse figure eight.

Melt the butter in a sauce pan, take the sauce pan off the heat and add the oat milk whisk together. Add this to the egg mixture.

Mix the flour, pumpkin spice and baking powder sieving them together. Add this to the mixture folding it gently until mixed together until fully combined.

Peel and core your apple and chop into small pieces.

Scoop the mixture evenly into the prepared cupcake holders. Drop the apple pieces and watch them fall into the mixture disappearing to form part of the cupcake.

Taking your prepared Apple Oat Crumble and sprinkle onto each cupcake creating a layer of crumble.

Place into the middle of your oven and bake for 12 – 15 minutes depending of your oven. Test the cake by using a skewer making it comes out clean with no cake mixture.

Allow to cool a little and either serve them warm with vegan ice cream or cream.

PS: For gluten free option replace the flour with gluten free and the oats with gluten free oats.
