Baking up a puff of meringues…

What is not to love… meringues and ice cream, meringues and chocolate sauce, eton mess, meringues and berries…. or just plain meringues or flavoured meringues.

We love meringues and as dairy free vegetarians, almost vegans, we make our meringues with the juice of our tin chick peas – aquafaba is the viscous water in which legume seeds such as chick peas have been cooked in. They are pretty easy to make with the family as you can lick the spoon 🙂

Scrumptious vegan Meringues:

  • Peppermint meringues
  • Cacao nibs and peppermint meringues
  • Vanilla meringues
  • Dried strawberries and vanilla meringues
  • Lemon meringues

How to make these beauties:

Ingredients:

  • 400g tin of drained chick peas aquafaba water
  • 300gsm caster sugar
  • pinch of salt

Optional extras and options:

  • 1tsp peppermint natural extract or
  • 1stp vanilla paste or
  • 1tsp lemon natural extract or
  • 1/4 cup dried strawberries with the vanilla paste or
  • 1/4 cup cacao nibs with the peppermint natural extract or vanilla paste

In a clean bowl attached to your mixer using the whisk attachments, pour in the drained tin of aquafaba water with a pinch of salt. Set your machine on to the whisking setting and whisk for approximately 6 – 10 minutes until the aquafaba water looks like white puffy clouds. The time is also weather dependent – very hot will take longer as well as wet. Once the aquafaba reaches puffy cloud stage add the sugar and whisk again until stiff peaks form. Once this happens fold in any of the optional extras.

Preheat your oven to 140 C and prepare three baking trays with eco friendly parchment.

Taking your ready mixture with the delightful options added or plain, scoop dollops of meringue onto your prepared baking trays. You can make them any size you want as large as a pavlova or as small as meringue kisses.

Place in the preheated oven for 25-30 minutes. Watch as they rise into pillows of meringues. Switch your oven off. Slightly open the door and keep an oven glove wedged in to keep your oven door slightly ajar. Allow them to cool completely in the oven.

Once completely cooled serve them with your favourite vegan ice cream, berries, or on their own… yummy
